Sharon’s Finest Chocolate Cake

Description

A rich, dark chocolate cake sure to please the chocolate lover in your life!


Ingredients

Units Scale

Cake:
2 cups sugar
1 3/4 cups all-purpose flour
3/4 cup dark cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup Umpqua Dairy whole milk
1/2 cup vegetable oil
1 cup boiling water (plus a smidge)

Frosting:
1/2 cup ( 1 stick) Umpqua Dairy unsalted butter
1/3 cup cocoa
1/3 cup dark cocoa
3 cups icing sugar
1 /3 cup Umpqua Dairy whole milk
1 tsp vanilla extract


Instructions

Cake: 

Heat oven to 350° F. Spray two 9 inch round pans. 

In a large bowl, stir together sugar, flour, cocoa, baking powder, baking soda and salt. In another bowl, mix eggs, milk, oil and vanilla, and add to dry mixture. Beat together on medium for approx. 2 minutes. 

Turn mixer on very low and add boiling water. Stir in carefully, as batter is watery, which is good. Pour in pans. bake at 350 deg for 25-30 minutes, watching carefully to not overbake. Cakes are done when toothpick inserted in middle comes out clean.

Frosting: 

Melt stick of butter, add cocoa and mix. set aside to cool. Add powdered sugar and milk alternately until desired consistency, then add vanilla. After cake cools completely, frost cake! 


Notes

Tips: I let my milk, eggs and butter come to room temperature before I bake or frost.
